Garden Pasta Salad
Ingredients:
Servings: 1-2 | Prep time: 15-20 minutes
- 100 grams Kaslo Sourdough Buckwheat Pasta
- 1/3 cup fresh parsley, chopped
- 1/8 cup fresh mint, chopped
- ½ cup cherry tomatoes, chopped
- 1 scallion, chopped
- 1 small garlic clove, minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Instructions:
- Boil water with a pinch of salt, add pasta and cook to desired firmness (5-8 minutes)
- Meanwhile, chop and mince vegetables
- Once pasta has finished cooking, let cool
- Combine remaining ingredients to cooled pasta
