We are beyond excited to finally be launching a new product – sourdough spaghetti!!! And yes, all the exclamation marks. It’s taken us eight years to get here, but we’re finally a go! Even with the extra challenges that the pandemic put in our way this past year, we managed to find a way through. We had a clear vision of what we wanted to develop, and though we took a few extra turns and even though there were a few extra stops and adapting processes along the way (such as video-conferencing with our machine support folks in Italy), we have still managed to develop the sourdough spaghetti we set our sights on eight years ago.
We know that producing a spaghetti opens up a whole range of new recipes and possibilities that we haven’t had before, such as this Vegan Tempeh Marinara Spaghetti recipe or Caramelized Onion Spaghetti recipe from Renee at Verity Nutrition.
Producing sourdough spaghetti is significantly more challenging than the rotinis, radiatoris and macaronis that you know us for so far. There are different protocols needed for the amount of moisture in the noodle, for drying, and ratios between the sourdough culture and the other ingredients in the dough. Even the machinery settings are different, as they affect the texture of the noodles as they are pushed through the shape (extruded through the die). We aren’t done our learning yet, but we’re excited to be here, after many years of trials and trying different things out that weren’t quite working.
We are very grateful for the financial support from the Governments of Canada and British Columbia through the Canadian Agricultural Partnership, a federal-provincial territorial initiative, under the Canada-BC Agri-Innovation Program. The program is delivered by the Investment Agriculture Foundation of B.C. For us, the funding was the extra little bit of support that we needed among the chaos of this last year.
We still have some additional tweaking of the recipe and adjusting the production procedures to be satisfied that we are producing the high-quality products that you are used to receiving from us, but we’re close. Our staff are learning new production procedures as we develop them, and we’re grateful for everyone’s enthusiasm along with us.
How can you get our new sourdough spaghetti?
Some stores local to the Kootenay regions where we’re based will have noticed a soft launch of the spaghetti in local shops starting in December 2020. Distribution to other stores may take a little bit longer, but you can now encourage your local grocer to start ordering if you haven’t seen us on shelves yet.
