Mexican Pasta Bowl
Ingredients:
Servings: 2-3 | Prep time: 10 minutes | Cook time: 15 minutes
- 160 grams Kaslo Sourdough Quinoa Pasta
- 1 lb. ground turkey
- ½ medium onion, chopped
- 1 tbsp. chilli powder
- ¼ tsp. onion powder, garlic powder, and paprika
- ½ tsp oregano
- 1 tsp cumin
- 1 tsp salt
- pepper to taste
- 2/3 water + 1 tbsp. arrowroot powder
Instructions:
- Boil water with a pinch of salt, add pasta and cook to desired firmness (5-8 minutes)
- Fry ground turkey and chopped onion in 1 tablespoon coconut oil
- When turkey is cooked through, add spices
- Mix water with arrowroot powder then add to turkey and spices, simmer
- When the pasta has finished cooking, drain and combine with ground turkey mixture
- Serve with cheese, sour cream, salsa, tomatoes and top with scallions
